Tuscan Cottage Cheese Egg Bake (Print Version)

# Ingredients:

01 - 10 large eggs.
02 - 1 cup plain cottage cheese, full-fat.
03 - 1 pound mild Italian sausage.
04 - 2.5 oz fresh spinach (2 packed cups).
05 - 1/3 cup oil-packed sun-dried tomatoes.
06 - 1 teaspoon kosher salt.
07 - 1/2 teaspoon black pepper.
08 - 1/2 teaspoon garlic powder.

# Instructions:

01 - Heat oven to 350°F.
02 - Cook sausage, breaking into pieces, 5 minutes. Drain excess fat.
03 - Blend eggs, cottage cheese, and seasonings.
04 - Pour into baking dish.
05 - Add sausage, chopped spinach, tomatoes. Stir to distribute evenly.
06 - Bake 35 minutes until set.
07 - Cool slightly before cutting.
