In a large mixing bowl, beat sugar, butter, and vanilla extract until creamy.

Add the egg to the mixture and beat again until fully incorporated.

Add the flour, baking powder, baking soda, and salt to the wet mixture and mix until a smooth dough forms.

Add green gel food coloring to the dough and beat again until the color is evenly distributed. Adjust the amount based on the type of food coloring used.

Using a 1-tablespoon cookie scoop, scoop dough and roll it into round balls to form turtle bodies. Place them on a greased cookie sheet.

Using a fork, press the dough balls down in two different directions to create a shell design. Ensure the cookies are about ½-inch thick after pressing.

For each turtle, roll a small piece of dough for the head and four smaller pieces for the feet. Gently attach them to the turtle's body.

Bake the cookies in the preheated oven for 5-7 minutes or until the bottoms start to brown.

Transfer the baked cookies to a cooling rack and allow them to cool completely.

Once the cookies are cooled, use an edible marker to carefully draw eyes on each turtle.
