In a small bowl, combine mayonnaise, ketchup, finely chopped dill pickles, pickle juice, paprika, garlic powder, kosher salt, ground black pepper, soy sauce, and rice vinegar. Mix thoroughly and set aside.

In a bowl, mix together ground beef, kosher salt, and ground black pepper. Divide the mixture into 6 equal-sized balls and set aside.

Ensure all ingredients, including tortillas, cheese, shredded lettuce, burger pickles, and any optional toppings like bacon or onions, are prepped and ready for assembly. This step is important as the cooking process is very quick.

Preheat a flat-top griddle to medium-high heat. Place the beef balls onto the griddle. Using a burger press, press each ball down for 15-20 seconds until flattened. Cook patties for 40 seconds. Flip the patties and immediately top each with a slice of cheese. Simultaneously, place tortillas onto the griddle to toast. Cover with a lid and cook for 2 minutes. Flip tortillas, then place the patties on top of each toasted tortilla using a spatula. Transfer to a plate.

Top each patty and tortilla combo with shredded lettuce, burger sauce, and burger pickles. Add optional toppings such as bacon or sliced onions, if desired. Serve and enjoy.
