01 -
Combine softened butter, olive oil, salt, garlic powder, Italian seasoning, and black pepper in a small bowl. Stir until well-mixed.
02 -
Preheat the oven to 350°F. Lightly grease muffin tins with cooking spray or oil and use a paper towel to remove excess oil pooling at the bottom.
03 -
Open the biscuit package and separate the biscuits. Place one biscuit into each muffin tin and press gently to mold it to the bottom and sides. Continue pressing until secured. Prick the bottom and sides of each biscuit with a fork.
04 -
Brush the inside of each biscuit with the prepared seasoning mixture, then lightly brush with pasta sauce (about ½ heaping teaspoon per biscuit).
05 -
Add 1 heaping tablespoon of mozzarella cheese to each cup, followed by ½ heaping tablespoon of pepperoni. Repeat with another tablespoon of mozzarella and ½ tablespoon of pepperoni. Optionally, sprinkle Italian seasoning on top.
06 -
Bake in the oven for 20-23 minutes or until biscuit edges are golden brown and cheese is melted. Lift the pies gently from the tins and serve on a platter, or leave them in the individual foil cups for serving if preferred.
