# Ingredients:

01 - 2 cups fresh pecans, chopped fine.
02 - 2/3 cup graham crackers, crushed into crumbs.
03 - 3/4 cup brown sugar, packed.
04 - 1/4 teaspoon salt.
05 - 1/3 cup unsalted butter, melted.
06 - 1/4 cup pure maple syrup.
07 - 1/2 teaspoon rum extract.
08 - 1 tablespoon light corn syrup.
09 - 16 ounces semi-sweet chocolate, chopped.
10 - Extra pecan pieces for topping.

# Instructions:

01 - Combine pecans, graham crumbs, brown sugar, and salt in a bowl.
02 - Pour in melted butter, maple syrup, rum extract, and corn syrup. Mix well with hands until crumbly.
03 - Use a cookie scoop to portion mixture, then gently roll into smooth balls.
04 - Place balls on lined sheet and freeze for 1 hour until firm.
05 - Melt chopped chocolate in microwave, stirring until smooth.
06 - Cover each ball in melted chocolate and top with pecan pieces.
07 - Let chocolate harden at room temp or quick-chill in freezer for 5-10 minutes.
