Preheat the oven to 400°F (200°C).

Clean and dry the baby potatoes, then place them onto a baking sheet. Drizzle with olive oil and sprinkle with salt.

Rub the olive oil and salt evenly into the skin of the potatoes to coat them well.

Bake the potatoes in the oven until they are fork-tender, approximately 20-30 minutes, depending on their size.

Allow the potatoes to cool slightly. Cut a V-shape into the top center of each potato and carefully remove it along with some of the filling.

Place shredded cheddar cheese inside the cavity of the potato so it melts slightly.

Add the bacon bits and chives on top of the cheese. Serve and enjoy.
