Mini Loaded Baked Potatoes (Print Version)

01 - 1-1.5 pounds baby potatoes
02 - 2 tablespoons olive oil
03 - Salt to taste
04 - 1/4-1/2 cup cheddar cheese, hand shredded
05 - 1/4 cup sour cream
06 - 1/4 cup bacon bits
07 - 1 tablespoon chives

# Instructions:

01 - Preheat the oven to 400°F (200°C).
02 - Clean and dry the baby potatoes, then place them onto a baking sheet. Drizzle with olive oil and sprinkle with salt.
03 - Rub the olive oil and salt evenly into the skin of the potatoes to coat them well.
04 - Bake the potatoes in the oven until they are fork-tender, approximately 20-30 minutes, depending on their size.
05 - Allow the potatoes to cool slightly. Cut a V-shape into the top center of each potato and carefully remove it along with some of the filling.
06 - Place shredded cheddar cheese inside the cavity of the potato so it melts slightly.
07 - Add the bacon bits and chives on top of the cheese. Serve and enjoy.
