Cream of Broccoli Soup (Print Version)

# Ingredients:

01 - 4 tablespoons unsalted butter, divided.
02 - 2 medium yellow onions, chopped.
03 - 6 garlic cloves, smashed.
04 - 1ΒΌ teaspoons fine sea salt.
05 - Black pepper to taste.
06 - 2 pounds broccoli with stalks.
07 - 6 cups water.
08 - 1-2 teaspoons lemon juice.
09 - Optional garnish: Heavy cream, Fresh chives.

# Instructions:

01 - Melt 3 tablespoons butter, cook onions and garlic.
02 - Peel and chop broccoli stalks.
03 - Add stalks, water, salt; simmer 20-25 minutes.
04 - Chop florets, add to pot. Cook 4-7 minutes until bright green.
05 - Add remaining butter. Blend until smooth in batches. Add lemon juice, adjust seasonings.
06 - Garnish with optional heavy cream or chives and serve.

01 - Keeps 4 days refrigerated.
02 - Freezes well for months.
03 - Can make vegan with olive oil.
04 - Stand blender gives best texture.
