Kielbasa Potato Soup (Print Version)

# Ingredients:

01 - 300g kielbasa sausage, bite-sized.
02 - 750g potatoes, peeled and cubed.
03 - 1 medium onion, diced.
04 - 1 medium carrot, diced.
05 - 2 celery ribs, diced.
06 - 4 garlic cloves, chopped.
07 - 1/2 teaspoon red chili flakes.
08 - 1.25 litres chicken stock.
09 - 300ml full-fat milk.
10 - 100g cheddar cheese, grated.
11 - 30g fresh parsley, chopped.
12 - 1 tablespoon olive oil.
13 - Salt and pepper to taste.

# Instructions:

01 - Fry kielbasa until crispy, remove.
02 - Cook onion, carrot, and celery in the same oil.
03 - Add garlic and chili flakes, cook for 1 minute.
04 - Add the potatoes and chicken stock, then boil.
05 - Simmer the soup covered for 10-12 minutes.
06 - Temper the milk with some hot soup to prevent curdling.
07 - Add the milk mixture and kielbasa back to the pot.
08 - Stir in cheddar cheese until melted.
09 - Simmer for an additional 2-3 minutes to thicken.
10 - Add parsley and season to taste before serving.

# Notes:

01 - Temper milk to prevent curdling.
02 - Any smoked sausage works.
03 - Reheat gently if made ahead.
04 - Don't freeze due to dairy.
