Preheat oven to 190C/375F fan. Slice croissants lengthways.

Add cheese slice, two ham slices, and another cheese slice to each croissant base.

Mix mustard, honey, and brown sugar. Brush on croissant tops and sprinkle with poppy seeds.

Heat in oven 6-7 minutes until warmed through. Serve immediately.
