Brown ground beef in large skillet over medium-high heat until cooked. Optionally season with salt and pepper. Remove to plate.

Optional: Drain excess grease and wipe skillet clean with paper towels.

Return skillet to medium-high heat. Add oil and potatoes. Cook 12-15 minutes until tender but slightly firm, stirring occasionally to prevent burning.

Add onion and cook until softened, about 5 minutes. Add garlic, hot sauce, salt, and pepper and cook 2 minutes until fragrant.

Return beef to skillet and gently mix with potatoes and onion. Cover, reduce heat to low, and cook 5 minutes until heated through.

Garnish with optional minced parsley and extra hot sauce if desired.
