# Ingredients:

01 - 4 cups watermelon, cubed
02 - 8 ounces halloumi cheese, sliced
03 - 1/4 cup fresh mint leaves
04 - 1 tablespoon olive oil
05 - 1 tablespoon lemon juice
06 - Salt and pepper to taste

# Instructions:

01 - Heat a grill pan over medium-high heat. Grill halloumi slices until golden brown, about 2-3 minutes per side.
