Easy Mashed Cauliflower (Print Version)

# Ingredients:

01 - 1 medium head cauliflower (2 pounds), chopped.
02 - 2 tablespoons melted butter.
03 - 7 roasted garlic cloves.
04 - 1/8 to 1/4 teaspoon Dijon mustard.
05 - 1/4 to 1/2 teaspoon sea salt.
06 - Freshly ground black pepper.
07 - Chives for garnish (optional).

# Instructions:

01 - Bring a large pot of salted water to a boil.
02 - Add the cauliflower and boil until knife-tender, about 10 minutes.
03 - Drain the cooked cauliflower well.
04 - Transfer cauliflower to a food processor. Puree with butter, garlic, mustard, salt, and pepper.
05 - Season to taste and garnish with chives if desired.

# Notes:

01 - Work in batches if using a smaller food processor.
02 - Recipe can be scaled up for larger groups.
