Bring milk, rice, and salt to boil. Reduce heat and simmer partially covered 20-25 minutes, stirring frequently.

Whisk egg and brown sugar. Gradually add hot rice mixture to temper eggs.

Add tempered egg mixture back to rice. Heat on low until thickened to 160°F, avoiding boiling.

Remove from heat. Stir in vanilla, raisins, and cinnamon.

Serve warm or cold. Pudding will thicken as it cools.
