Creamy Rice Pudding (Print Version)

# Ingredients:

01 - 2 1/2 cups (600ml) whole milk.
02 - 1/3 cup (66g) short grain white rice.
03 - Pinch salt.
04 - 1 large egg.
05 - 1/4 cup (50g) dark brown sugar, packed.
06 - 1 teaspoon vanilla extract.
07 - 1/4 teaspoon cinnamon.
08 - 1/3 cup (40g) raisins.

# Instructions:

01 - Bring milk, rice, and salt to boil. Reduce heat and simmer partially covered 20-25 minutes, stirring frequently.
02 - Whisk egg and brown sugar. Gradually add hot rice mixture to temper eggs.
03 - Add tempered egg mixture back to rice. Heat on low until thickened to 160°F, avoiding boiling.
04 - Remove from heat. Stir in vanilla, raisins, and cinnamon.
05 - Serve warm or cold. Pudding will thicken as it cools.

01 - Use short grain rice for best results.
02 - Will thicken while cooling.
03 - Can be served warm or cold.
