Creamy Parmesan Chicken & Rice (Print Version)

# Ingredients:

01 - 4 boneless, skinless chicken breasts.
02 - 1 cup long-grain white rice.
03 - 2 cups chicken broth.
04 - 1 cup heavy cream.
05 - 1 cup Parmesan cheese, grated.
06 - 1 small onion, finely chopped.
07 - 3 cloves garlic, minced.
08 - 2 tablespoons olive oil.
09 - Salt and pepper to taste.
10 - Fresh parsley for garnish.

# Instructions:

01 - Season chicken with salt and pepper.
02 - Brown chicken in oil, remove and set aside.
03 - Sauté onion and garlic in same pan.
04 - Add rice, toast 2-3 minutes.
05 - Pour in broth and cream, stir.
06 - Return chicken to pan.
07 - Cover, simmer 20-25 minutes.
08 - Stir in Parmesan until melted.
09 - Garnish with parsley.

# Notes:

01 - Use long-grain white rice for best results.
02 - Toast rice to prevent mushiness.
03 - Can substitute chicken thighs.
04 - Half-and-half can replace cream.
