Creamed Spinach (Print Version)

# Ingredients:

01 - 4 tablespoons unsalted butter.
02 - 1 tablespoon onion powder.
03 - 3 cloves garlic, minced.
04 - 4 teaspoons salt.
05 - 1 teaspoon black pepper.
06 - 1/2 teaspoon nutmeg.
07 - 1/4 cup all-purpose flour.
08 - 2 cups half-and-half.
09 - 1½ cups 2% milk.
10 - 3 containers (10 oz each) fresh spinach.
11 - 1 cup mozzarella/provolone blend.
12 - 4 ounces cream cheese.
13 - 1/2 cup parmesan cheese, shredded.

# Instructions:

01 - Boil salted water, add spinach for 1 minute.
02 - Drain, cool with cold water.
03 - Squeeze out water, chop spinach.
04 - Cook butter, garlic, onion powder 2-3 minutes.
05 - Add salt, pepper, nutmeg.
06 - Stir in flour, cook 2 minutes.
07 - Add half-and-half and milk, bring to boil.
08 - Add mozzarella/provolone and cream cheese.
09 - Cook 5-6 minutes until smooth.
10 - Stir in spinach and parmesan.

# Notes:

01 - Can use minced onion instead of powder.
02 - Can add more spinach if desired.
03 - Works with all half-and-half.
04 - Optional: add crumbled bacon.
