Beef Burritos (Print Version)

# Ingredients:

01 - 1 pound lean ground beef (85/15).
02 - 1 medium onion, finely chopped.
03 - 10 ounces Rotel Tomatoes with Green Chilis.
04 - 1 teaspoon ground cumin.
05 - 1/2 teaspoon smoked paprika.
06 - 1/4 to 1/2 teaspoon chili powder.
07 - 1/2 teaspoon fine sea salt.
08 - 1/4 teaspoon black pepper.
09 - 15 ounces black beans with juice.
10 - 6 10-inch flour tortillas.
11 - 2 cups shredded Mexican cheese blend.

# Instructions:

01 - Cook ground beef in large skillet over medium-high heat until done, about 5 minutes. Drain excess fat, leaving 2-3 tablespoons.
02 - Add onion and seasonings, cook until onion softens and beef browns, 3-4 minutes.
03 - Add tomatoes and beans with juices. Simmer on medium-low until liquid evaporates, 8-10 minutes. Season to taste.
04 - Layer cheese and meat mixture on tortillas. Fold sides over filling, then bottom up, roll tightly away from you.
05 - Heat oil in skillet over medium heat. Cook burritos seam-side down until golden on all sides, 3-5 minutes.
