Gather all ingredients, shred the carrots and purple cabbage, and strain the yogurt. Prepare the green avocado cilantro dressing using a mixer. Optionally, trim the edges of the bread or use whole slices as preferred.

In two separate bowls, mix half of the yogurt with the shredded carrots in one bowl and the shredded purple cabbage in the other. Season each mixture with salt and optional black pepper.

Take four slices of bread for one whole sandwich. Spread the carrot mixture on the first slice, the cabbage mixture on the second slice, and the green dressing on the third slice. Add optional fresh herbs to the sandwich if desired.

Stack the prepared slices one on top of the other, ending with the fourth slice of bread. Cut the sandwich diagonally into two halves to make two sandwiches. For smaller portions, cut each half diagonally again to yield four mini sandwiches, resulting in a total of 12 bite-sized sandwiches.
