Creamy Garlic Butter Tuscan Shrimp (Print Version)

# Ingredients:

01 - 2 tablespoons butter, divided.
02 - 1 tablespoon olive oil.
03 - 1 pound raw shrimp.
04 - 1 small onion, diced.
05 - 6 garlic cloves, minced.
06 - 1/2 cup white wine.
07 - 5 ounces sun-dried tomatoes in oil.
08 - 1 3/4 cups half and half.
09 - 3 cups fresh spinach.
10 - 2/3 cup fresh parmesan.
11 - 2 teaspoons Italian herbs.
12 - 1 tablespoon fresh parsley.
13 - 1 teaspoon cornstarch mixed with water.

# Instructions:

01 - Heat butter and oil over medium-high. Cook shrimp until pink, about 2 minutes per side.
02 - Cook onions until soft, add garlic and cook 1 minute. Add wine if using and reduce.
03 - Add tomatoes, cream, salt and pepper. Simmer gently.
04 - Add spinach and parmesan. Thicken with cornstarch if desired. Return shrimp to pan.

# Notes:

01 - Serve over pasta with reserved pasta water for best results.
02 - Can use light cream and milk instead of half-and-half.
