Tuscan Cream Salmon (Print Version)

# Ingredients:

01 - 2 6-ounce salmon fillets.
02 - 4 tablespoons olive oil.
03 - 2 tablespoons butter.
04 - 1 small onion, diced.
05 - 4 cloves garlic, minced.
06 - 1/2 cup cherry tomatoes, halved.
07 - 1/4 cup chopped sun-dried tomatoes in oil.
08 - 1/2 cup vegetable or chicken broth.
09 - 1/2 cup heavy cream.
10 - 1 teaspoon dried basil.
11 - 1/2 teaspoon kosher salt.
12 - 1/4 teaspoon black pepper.
13 - 1/4 cup grated Parmesan.
14 - 2 cups fresh baby spinach.
15 - 2 tablespoons fresh parsley.

# Instructions:

01 - Salt and pepper salmon fillets on both sides.
02 - Heat oil in pan. Sear salmon 5 minutes each side until crisp. Remove and set aside.
03 - Heat oil and butter. Cook onion and garlic 5 minutes until soft.
04 - Add both types of tomatoes, seasonings. Simmer until tomatoes blister.
05 - Pour in broth and cream. Simmer, add cheese and spinach until wilted.
06 - Return salmon to pan. Heat through and serve.

# Notes:

01 - Can bake salmon at 350°F for 15 minutes instead of pan-searing.
02 - Add more broth for extra sauce.
03 - Can make sauce while salmon cooks to save time.
