Pour the quinoa and water into a pot. Set heat high till it bubbles, then turn it way down. Cover it. Just let it hang out for fifteen to twenty minutes. When there's no water left and the quinoa's soft, take it off the heat and let it chill for a bit.

Set your oven to 175°C so it gets hot. Lay some aluminum foil over a baking sheet and set it aside.

Throw some oil in a skillet over medium. Toss in the garlic and onion. Sauté the garlic for about a minute, and let the onion cook until it's clear and tender, maybe five minutes. Move the pan off the stove and give it a few minutes to cool down.

Grab a little bowl. Dump in the brown sugar, Worcestershire sauce, and water. Mix until it's nice and thick.

Get a big bowl. Add turkey, the cooled quinoa, your sautéed onion and garlic, egg, Worcestershire, tomato paste, hot sauce, salt, and pepper. Stir everything up well. It's gonna look pretty wet.

Scoop the turkey mixture and mold it into a loaf right on your prepared foil-lined sheet. Slather that brown sugar glaze evenly all over the top.

Slide the meatloaf into your preheated oven. Wait until it's 74°C inside and doesn't look pink, around 50 minutes. After taking it out, let it sit for 10 minutes so slicing is easier. Then dig in.
