Traeger Smoked Buffalo Chicken Dip (Print Version)

# Ingredients:

→ For the Chicken

01 - 2 pounds boneless, skinless chicken breasts
02 - Olive oil, for brushing
03 - Kosher salt and pepper, to taste
04 - 1 Tbsp Frank's Red Hot Buffalo Ranch dry seasoning (optional)

→ For the Dip

05 - 12 oz buffalo wing sauce (Frank's recommended)
06 - 8 oz cream cheese
07 - 8 oz ranch dressing
08 - 2 cups shredded cheddar cheese

→ For Serving

09 - Fritos Scoops or tortilla chips for dipping
10 - Shredded cheddar cheese, for garnish (optional)
11 - Blue cheese crumbles, for garnish (optional)
12 - Green onions, for garnish (optional)

# Instructions:

01 - Brush the chicken on all sides with olive oil and sprinkle with kosher salt and pepper, and the Frank's dry seasoning if using.
02 - Cook the chicken on the Traeger set to 250 degrees for 1 to 1 1/2 hours, flipping halfway through cooking. Check to make sure the internal temperature reaches 165 degrees.
03 - Remove the chicken and dice into small pieces. Place the chicken in a foil pan or cast iron skillet with the buffalo wing sauce, cream cheese, ranch dressing, and shredded cheese.
04 - Put the pan back on the Traeger set at 250 degrees for 1 1/2 to 2 hours, stirring a few times as it smokes.
05 - Serve with Fritos Scoops or tortilla chips for dipping, garnish with extra shredded cheese, blue cheese crumbles and/or green onions if desired.
