In a large skillet over medium-high heat, warm olive oil and add diced onions and bell pepper. Sauté for 3-4 minutes until softened.

Add ground beef to the skillet and cook until no pink remains. Drain excess grease.

Return the beef to the skillet. Season with taco seasoning, then add undrained tomatoes with green chilis, beef broth, sour cream, and cheese. Stir until combined and let the mixture simmer on low heat, stirring occasionally while the cheese melts.

Add the drained spaghetti to the skillet and toss to coat with the meat sauce.
