Roasted Sweet Potato Rounds with Honey & Feta (Print Version)

# Ingredients:

01 - 3 large sweet potatoes.
02 - 3 tablespoons olive oil.
03 - ½ teaspoon cinnamon.
04 - ½ teaspoon smoked paprika.
05 - ½ teaspoon ground cumin.
06 - ½ teaspoon ground coriander.
07 - ½ teaspoon red pepper flakes.
08 - 1 teaspoon kosher salt.
09 - ½ teaspoon black pepper.
10 - 1 tablespoon regular or hot honey.
11 - ⅓ cup crumbled feta cheese.
12 - Fresh chives or parsley, chopped.
13 - Additional honey for serving.

# Instructions:

01 - Heat oven to 425°F. Wash and dry sweet potatoes, slice into ⅓-inch rounds.
02 - Coat sheet pan with oil, add potatoes and turn to coat. Sprinkle with spices and drizzle with honey.
03 - Spread potatoes on sheet pans without touching, using multiple pans if needed.
04 - Bake 20 minutes, flip, then bake 20-25 more minutes until golden and crispy edged.
05 - Transfer to platter, add extra salt and honey, top with feta and fresh herbs. Serve warm.

01 - Don't crowd potatoes on pan.
02 - Hot honey adds nice spice.
03 - Best served fresh and warm.
