Swamp Soup with Sausage (Print Version)

# Ingredients:

01 - 1 pound smoked sausage, chopped
02 - 1 cup sweet onion, diced
03 - 2 cloves garlic, minced
04 - 1 packet Knorr Vegetable soup mix, dry
05 - 8 cups chicken broth
06 - 2 cans (15.5 ounces each) great Northern beans, drained and rinsed
07 - 2 cans (14.5 ounces each) seasoned turnip greens, not drained
08 - 2 cups cooked short pasta, such as ditalini or other small tube pasta

# Instructions:

01 - In a large soup pot, over medium heat, add the diced sausage and onion. Cook for 3-4 minutes, or until the sausage is starting to brown and the onions are softening.
02 - Add the garlic to the pot and stir. Cook for 1 minute.
03 - Add the soup mix, chicken broth, beans, and turnip greens to the pot. Stir to combine.
04 - Bring the soup to a boil, then reduce to a simmer. Cook over low heat until the turnip greens are tender and the soup mix is rehydrated.
05 - 10 minutes before serving, add the cooked pasta to the soup. Adjust seasoning with salt and pepper, if needed, but taste first since the greens and soup mix may have sufficient seasoning.
06 - Serve the soup with a dash of hot sauce and a side of cornbread or hush puppies, if desired.

01 - Taste before adding salt, as the soup may already be well-seasoned from the packaged ingredients.
