Parmesan Spinach Bites (Print Version)

# Ingredients:

01 - 1/4 cup raw sesame seeds.
02 - 10 ounces frozen chopped spinach, thawed and drained.
03 - 1 cup gluten-free Italian breadcrumbs.
04 - 2 large eggs.
05 - 1/2 cup grated Parmesan cheese.
06 - 2 tablespoons softened butter.
07 - 1/4 teaspoon salt.
08 - 1/4 teaspoon black pepper.
09 - 1/8 teaspoon ground nutmeg.

# Instructions:

01 - Heat oven to 350°F. Line baking sheet with parchment.
02 - Cook sesame seeds in dry skillet 2-3 minutes until golden. Set aside.
03 - Combine drained spinach, eggs, breadcrumbs, cheese, butter and seasonings.
04 - Form into 20 tablespoon-sized balls. Roll in toasted sesame seeds.
05 - Place on prepared sheet. Bake 10 minutes until firm.

# Notes:

01 - Can be frozen unbaked for later use.
02 - Keeps in fridge up to 24 hours before baking.
