Quick Breakfast Quesadilla Recipe (Print Version)

# Ingredients:

→ Base

01 - 1 teaspoon extra virgin olive oil or butter
02 - 2 large eggs
03 - 1 large flour tortilla

→ Vegetables & Seasonings

04 - 1 1/2 cups (2 oz) packed spinach
05 - 1/4 teaspoon garlic powder
06 - 1/4 teaspoon onion powder
07 - Salt and pepper to taste

→ Cheese

08 - 1/4 cup (1 oz) feta cheese
09 - 1/2 - 3/4 cup (2-2.5 oz) freshly shredded mozzarella

# Instructions:

01 - Heat olive oil in pan over medium heat. Add spinach, garlic powder, and onion powder. Saute 1 minute until spinach begins to wilt.
02 - Add eggs, break up yolk and scramble with spinach until cooked, 1-2 minutes. Add feta, stir to combine, then remove from pan.
03 - Lower heat to medium-low. Add tortilla and sprinkle half the mozzarella on one half. Top with egg mixture and remaining mozzarella. Fold tortilla.
04 - Cook about 90 seconds per side until tortilla is crispy and cheese is melted. Cut in half and serve.

# Notes:

01 - Can be made ahead and frozen for up to 2 months
02 - Reheat frozen quesadilla in pan, microwave, or air fryer
03 - Can substitute any vegetables or cheese varieties
04 - Fresh shredded cheese melts better than pre-shredded
