Spicy Mexican Corn Bites (Print Version)

# Ingredients:

→ Creamy Base

01 - 1/4 cup mayonnaise
02 - 1/4 cup sour cream
03 - 1 tablespoon lime juice

→ Main Ingredients

04 - 2 cups corn kernels (fresh, frozen, or canned)

→ Seasonings

05 - 1 teaspoon chili powder (adjust to taste)
06 - 1/2 teaspoon smoked paprika
07 - 1/2 teaspoon ground cumin
08 - 1/4 teaspoon cayenne pepper (optional, for extra heat)

# Instructions:

01 - In a large mixing bowl, combine mayonnaise, sour cream, and lime juice. Stir until you achieve a smooth, creamy consistency.
02 - Add your corn kernels to the sauce mixture and stir well to ensure each kernel is evenly coated.
03 - Incorporate the chili powder, smoked paprika, ground cumin, and cayenne pepper (if using). Mix thoroughly to distribute all spices evenly.
04 - Set your non-stick skillet over medium heat and allow it to warm up.
05 - Drop spoonfuls of the corn mixture onto the heated skillet to create small, bite-sized portions. Cook each side for 2-3 minutes until they develop a golden-brown color with crispy edges.
06 - Transfer the cooked corn bites to a serving plate. If desired, garnish with fresh chopped cilantro, crumbled queso fresco, or an extra sprinkle of chili powder.

# Notes:

01 - These zesty corn bites are inspired by Mexican street corn (elote) and make perfect appetizers or snacks
02 - Can be customized with different heat levels by adjusting the amount of spices
