Cut the salmon into 3-inch cubes, pat dry and set aside. The skin can be removed or kept based on preference.

In a large bowl, combine paprika, cayenne pepper, salt, maple syrup, pepper, and lime juice. Mix well.

Add the salmon pieces to the spice mixture and coat well. Set aside to marinate for 15 minutes.

When ready to fry, add cornmeal to the marinated salmon and mix well to coat all pieces.

Heat peanut oil in a pan (preferably a cast iron skillet). Add salmon pieces and cook for 2-3 minutes until one side is cooked, then flip and cook the other side until done.

In a separate bowl, combine diced avocado, red onion, lime juice, salt, pepper, and cilantro. Mix gently.

Remove cooked salmon from the pan and serve with the avocado onion relish.
