Spiced Salmon Bites (Print Version)

# Ingredients:

→ Salmon Bites

01 - 1 lb. salmon, cut into 3-inch cubes
02 - 2 teaspoons paprika
03 - ½ teaspoon cayenne pepper
04 - ¼ teaspoon pepper
05 - ½ teaspoon salt
06 - ¾ teaspoon maple syrup
07 - ½ lime, juiced
08 - 2 tablespoons cornmeal
09 - ¼ cup peanut oil

→ Avocado Onion Relish

10 - 2 avocados, sliced in cubes
11 - ¼ cup red onion, finely diced
12 - ½ lime, juiced
13 - Salt and pepper, to taste
14 - ½ tablespoon cilantro, chopped

# Instructions:

01 - Cut the salmon into 3-inch cubes, pat dry and set aside. The skin can be removed or kept based on preference.
02 - In a large bowl, combine paprika, cayenne pepper, salt, maple syrup, pepper, and lime juice. Mix well.
03 - Add the salmon pieces to the spice mixture and coat well. Set aside to marinate for 15 minutes.
04 - When ready to fry, add cornmeal to the marinated salmon and mix well to coat all pieces.
05 - Heat peanut oil in a pan (preferably a cast iron skillet). Add salmon pieces and cook for 2-3 minutes until one side is cooked, then flip and cook the other side until done.
06 - In a separate bowl, combine diced avocado, red onion, lime juice, salt, pepper, and cilantro. Mix gently.
07 - Remove cooked salmon from the pan and serve with the avocado onion relish.
