Southwest Ground Beef and Sweet Potato Skillet (Print Version)

# Ingredients:

01 - Ground beef, 85/15 or 90/10 (1 pound).
02 - Sweet potatoes (2 medium).
03 - Vine or Campari tomatoes (4).
04 - Salsa verde.
05 - Sweet onion (1 large).
06 - Fresh garlic cloves (4).
07 - Tomato paste (1 tablespoon).
08 - Ground cumin (2 teaspoons).
09 - Ground coriander (1 teaspoon).
10 - Salt and pepper to taste.
11 - Shredded cheese (1 cup).
12 - Fresh cilantro, chopped (1/4 cup, optional).
13 - JalapeƱo, sliced (optional).
14 - Sour cream (optional).

# Instructions:

01 - Caramelize sweet potato chunks in oil over medium heat.
02 - Set potatoes aside, cook onions until tender.
03 - Brown beef, add tomatoes, paste, spices and garlic.
04 - Add salsa verde and return potatoes to pan until tender.
05 - Top with cheese and optional garnishes.

01 - Can use frozen sweet potatoes.
