Southern Salmon Patties (Print Version)

# Ingredients:

01 - 14.75-oz can pink salmon (with or without bones).
02 - 1/4 cup chopped onion.
03 - 1/4 cup yellow cornmeal.
04 - 1 large egg.
05 - 1/4 cup all-purpose flour or almond flour.
06 - 3 tablespoons mayonnaise.
07 - 1/4 teaspoon chili powder.
08 - 1/2 tablespoon olive oil or vegetable oil.
09 - Salt and pepper to taste.

# Instructions:

01 - Open the can of salmon and drain completely. Place in a mixing bowl and loosen with a fork.
02 - Add onion, cornmeal, flour, mayonnaise, chili powder, egg, salt and pepper. Stir until well blended.
03 - Shape the mixture into small burger-sized patties using a measuring cup.
04 - Cook in olive oil over medium heat for about 5 minutes per side until golden brown.

# Notes:

01 - Can be made with either regular flour or almond flour for low-carb option.
02 - Works with canned salmon with or without bones.
