Southern Mac and Cheese (Print Version)

# Ingredients:

01 - 8 ounces macaroni, cooked and drained
02 - 2 tablespoons unsalted butter
03 - 2 tablespoons all-purpose or gluten-free flour
04 - 1 cup whole milk
05 - 12 ounces evaporated milk
06 - 1 teaspoon onion powder
07 - 1 tablespoon garlic powder
08 - 1/2 teaspoon sea salt
09 - 1/2 teaspoon black pepper
10 - 1 teaspoon Cajun seasoning
11 - 3/4 cup mozzarella cheese, shredded
12 - 3/4 cup sharp cheddar cheese, shredded
13 - Additional cheese, for garnish

# Instructions:

01 - Cook macaroni according to package directions. Rinse, drain, and set aside. Spray a 10.5-inch by 7.5-inch baking dish with nonstick spray. Preheat oven to 375°F (190°C).
02 - Melt butter in a large skillet over medium heat. Whisk in the flour and continue whisking to create a thick slurry.
03 - Add whole milk, evaporated milk, onion powder, garlic powder, sea salt, black pepper, and Cajun seasoning to the skillet. Bring to a light simmer for 2 minutes, stirring frequently, until the mixture is slightly thickened.
04 - Add mozzarella cheese and sharp cheddar cheese to the skillet. Stir continuously until the mixture is thick and creamy. Turn off the heat.
05 - Add the cooked macaroni to the skillet and stir until the pasta is fully coated with the cheese sauce.
06 - Pour the macaroni mixture into the prepared baking dish. Add a layer of extra cheese on top. Bake for 18 to 20 minutes, or until the cheese is melted and the edges are bubbly.
07 - Remove the dish from the oven and let it rest for 5 minutes before serving.
