Classic Smash Burgers with Baconnaise (Print Version)

# Ingredients:

→ Burgers

01 - 2 pounds ground chuck (80/20), formed into 1/3 pound balls
02 - 2 white onions, thinly sliced
03 - 1/2 pound bacon, crispy and chopped
04 - Salt, pepper, and garlic for seasoning
05 - Yellow mustard for cooking
06 - Sliced pepper jack cheese
07 - Burger buns
08 - Avocado oil for cooking

→ Baconnaise Sauce

09 - 1/2 cup mayo
10 - 2 tablespoons ketchup
11 - 2 tablespoons mustard
12 - 1/2 pound crispy chopped bacon
13 - 1 tablespoon Worcestershire sauce
14 - 1 tablespoon apple cider vinegar
15 - 1 tablespoon all-purpose rub
16 - 1 tablespoon red pepper flakes

# Instructions:

01 - Form ground chuck into 1/3 pound balls and refrigerate for 30 minutes.
02 - Slice white onions very thin using mandoline with safety guard. Squeeze out excess water and refrigerate.
03 - Crisp up bacon, chop, and set aside.
04 - Mix mayo, ketchup, mustard, bacon, Worcestershire sauce, apple cider vinegar, all-purpose rub, and red pepper flakes. Refrigerate.
05 - Heat griddle to medium-high. Add avocado oil and burger balls, spaced 2-3 inches apart. Top with sliced onions and smash with burger press. Season with salt, pepper, and garlic.
06 - Cook 3-4 minutes, add mustard on top, flip, add pepper jack cheese. Cook about 3 more minutes until cheese melts.
07 - Toast buns on griddle. Layer with Baconnaise sauce, double smash burgers, more sauce, and top bun.

01 - Use 80/20 ground chuck for best flavor
02 - Always use mandoline safety guard when slicing onions
03 - Chilling burger balls helps maintain shape
