Slow Cooker Peanut Chicken (Print Version)

# Ingredients:

→ Protein

01 - Boneless, skinless chicken breasts or thighs

→ Vegetables

02 - Minced garlic
03 - Diced onions
04 - Sliced bell peppers (any color, preferably red)

→ Peanut Sauce

05 - Natural peanut butter (creamy or crunchy)
06 - Chicken broth
07 - Soy sauce
08 - Honey
09 - Sesame oil
10 - Chili garlic paste

→ Garnish

11 - Fresh cilantro
12 - Lime juice
13 - Chopped peanuts (optional)

# Instructions:

01 - Add minced garlic, diced onions, and sliced bell peppers to the bottom of the slow cooker. Place boneless chicken breasts or thighs on top of the vegetables.
02 - In a mixing bowl, whisk together natural peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until fully combined.
03 - Pour the prepared peanut sauce over the chicken and vegetables. Cover the slow cooker with its lid and cook on low heat until the chicken is thoroughly cooked.
04 - Once cooked, stir in lime juice and fresh cilantro. Garnish with additional cilantro or chopped peanuts, if desired, and serve over rice or noodles.
