Add minced garlic, diced onions, and sliced bell peppers to the bottom of the slow cooker. Place boneless chicken breasts or thighs on top of the vegetables.

In a mixing bowl, whisk together natural peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until fully combined.

Pour the prepared peanut sauce over the chicken and vegetables. Cover the slow cooker with its lid and cook on low heat until the chicken is thoroughly cooked.

Once cooked, stir in lime juice and fresh cilantro. Garnish with additional cilantro or chopped peanuts, if desired, and serve over rice or noodles.
