Easy Slow Cooker Beef Bourguignon (Print Version)

# Ingredients:

→ Meat

01 - 3 pounds boneless beef chuck, cut to 1 inch cubes
02 - 5 slices bacon, finely chopped

→ Vegetables

03 - 5 medium carrots, sliced
04 - 1 pound baby potatoes (tri color)
05 - 8 ounces fresh mushrooms, sliced
06 - 3 garlic cloves, finely chopped

→ Sauce & Seasonings

07 - 1 cup red cooking wine
08 - 2 cups chicken broth
09 - 1/2 cup tomato sauce
10 - 1/4 cup soy sauce
11 - 1/4 cup flour
12 - 2 tablespoons thyme, finely chopped

→ Garnish

13 - Fresh chopped parsley

# Instructions:

01 - Cook bacon in large skillet until crisp. Transfer to slow cooker. Season beef with salt and pepper, sear 2-3 minutes per side in skillet, then transfer to slow cooker.
02 - Add red wine to skillet, scraping brown bits. Reduce, then add chicken broth, tomato sauce, and soy sauce. Whisk in flour gradually. Pour sauce into slow cooker.
03 - Add garlic, thyme, carrots, potatoes, and mushrooms to slow cooker. Stir well.
04 - Cook on low 8-10 hours or high 6 hours until beef is tender.
05 - Garnish with parsley. Optionally serve with mashed potatoes.

01 - Best cooked low and slow for most tender beef
02 - Can be served with additional mashed potatoes
03 - Scraping brown bits from pan adds rich flavor
