Sausage and Lentil Soup (Print Version)

# Ingredients:

01 - 1/4 cup olive oil.
02 - 12 ounces smoked kielbasa, sliced.
03 - 1 large white onion, diced.
04 - 6 cloves garlic, pressed.
05 - 1 tablespoon harissa seasoning.
06 - 1 teaspoon smoked paprika.
07 - 4 tablespoons tomato paste.
08 - 16 ounces brown lentils, dried.
09 - 7½ cups chicken or beef stock.
10 - 1 tablespoon parsley, chopped.
11 - 1 tablespoon cilantro, chopped.
12 - Salt and black pepper to taste.

# Instructions:

01 - Heat oil in large pot over medium-high.
02 - Brown sausage until golden.
03 - Add onions, salt, pepper; cook 2-3 minutes.
04 - Add garlic and spices, cook 1 minute.
05 - Stir in tomato paste for 30 seconds.
06 - Add lentils and stock.
07 - Bring to boil, then reduce heat.
08 - Cover and simmer 40-45 minutes.
09 - Stir in herbs before serving.

# Notes:

01 - Serve with crusty bread or flatbread.
02 - Can use turkey or beef sausage.
03 - Pick through lentils before cooking.
04 - Soup thickens as it cooks.
