Rudy's Sunshine Tahini Salad (Print Version)

# Ingredients:

→ Dressing

01 - 2 limes
02 - 1 tsp salt
03 - ¼ cup tahini
04 - ¼ cup extra virgin olive oil

→ Salad

05 - 1 can chickpeas, 14 oz, drained
06 - 2 medium cucumbers, cut into bite-sized pieces
07 - 5 stalks celery, diced
08 - ½ cup cilantro, finely chopped

# Instructions:

01 - Grate the zest from 1 lime and add it to a medium bowl, along with the juice from both limes. Whisk in salt, tahini, and olive oil.
02 - Add drained chickpeas, diced cucumber, celery, and chopped cilantro to a large bowl.
03 - Drizzle the dressing over the salad and toss to combine. Serve immediately or store in an airtight container in the fridge.
