Roasted Garlic (Print Version)

# Ingredients:

01 - 2 heads garlic (3 1/2 ounces/100g total).
02 - Extra-virgin olive oil or neutral vegetable oil as needed.
03 - Kosher salt.
04 - Freshly ground black pepper.

# Instructions:

01 - Preheat oven to 375°F. Remove papery skins from garlic and cut top 1/2 inch off heads.
02 - Place wire rack in rimmed baking sheet. Make 12x8 inch foil piece.
03 - Place garlic on foil cut side up, drizzle with oil, season with salt and pepper. Seal foil packet.
04 - Put 1 cup oil in ovenproof saucepan. Add garlic heads cut side down and cover.
05 - Roast 45 minutes until cloves are golden and tender. Cool 5 minutes before squeezing out cloves.
06 - Cook 20 minutes, flip garlic, cook 20-25 minutes more until tender. Cool 5-10 minutes before squeezing out cloves.

# Notes:

01 - Can use all olive oil, all vegetable oil, or blend.
02 - 50/50 olive oil and canola recommended for oil method.
03 - Strain oil if papery bits remain.
