Heat water in a kettle, microwave, or on the stove until steaming hot. Stir in sugar until dissolved, then mix in apple cider vinegar and all seasonings (ginger, coriander seeds, black peppercorns, mustard seeds, cinnamon sticks, and bay leaf). Set aside.

Remove grapes from the stems and wash thoroughly. Cut larger grapes in half to enhance flavor absorption.

Place the grapes into a large lidded non-reactive container, such as a glass jar or ceramic vessel. Nestle ginger slices, cinnamon sticks, and the bay leaf into the grapes. Pour the vinegar mixture over the grapes, ensuring they are fully submerged. Use as much seasoning as possible. Allow the mixture to cool to room temperature, then seal the container and transfer it to the refrigerator. Let the grapes pickle for at least 1 hour before serving.
