Pumpkin Spice Donuts (Print Version)

# Ingredients:

01 - Cake flour (3 cups).
02 - Pumpkin puree (1/2 cup).
03 - Pumpkin pie spice (1 1/2 tablespoons).
04 - Baking powder (2 teaspoons).
05 - Kosher salt (3/4 teaspoon).
06 - Salted butter, room temp (3 tablespoons).
07 - Brown sugar (2/3 cup).
08 - Egg yolks (2).
09 - Vanilla extract (1 teaspoon).
10 - Sour cream (3/4 cup).
11 - Vegetable oil for frying (4 cups).
12 - Sugar for coating (1/2 cup).
13 - Pumpkin pie spice for coating (1 tablespoon).

# Instructions:

01 - Drain excess moisture from pumpkin puree using paper towels until paste-like.
02 - Sift together flour, spices, baking powder and salt.
03 - Beat butter and sugar, add pumpkin, egg yolks and vanilla.
04 - Alternate adding sour cream and flour mixture until incorporated.
05 - Refrigerate dough 1 hour or overnight until firm.
06 - Roll dough 1/2 inch thick, cut donuts and holes.
07 - Refrigerate shaped donuts 20 minutes.
08 - Cook in 350°F oil 2-3 minutes per side until golden.
09 - Roll warm donuts in spiced sugar mixture.

02 - Maintain oil temperature.
03 - Can be made without pumpkin.
