Spicy Pineapple Habanero Hot Sauce (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 cups fresh pineapple, chopped (or 1 can pineapple chunks in juice, drained)
02 - 4-6 habanero peppers, stemmed and seeded
03 - 1/2 cup white vinegar or apple cider vinegar
04 - 2 tablespoons fresh lime juice
05 - 1 tablespoon honey or sugar (optional)
06 - 1/2 teaspoon salt

→ Optional Aromatics

07 - 2 cloves garlic
08 - 1 small onion, chopped
09 - 1 tablespoon olive oil (for sautéing)

→ Optional Seasonings

10 - 1/2 teaspoon cumin
11 - 1/4 teaspoon smoked paprika
12 - 1/4 cup fresh cilantro

# Instructions:

01 - Get everything ready - chop your pineapple if using fresh, drain if using canned. Put on those gloves and carefully stem and seed your habaneros. If you're using the optional ingredients, chop your onion and garlic now too.
02 - If you're using onion and garlic, warm up that olive oil in a saucepan over medium heat. Cook the onion until it's soft (about 3-4 minutes), then add the garlic and cook for another minute or two until you can really smell that gorgeous aroma.
03 - Toss everything into your blender or food processor - that's your pineapple, habaneros, vinegar, lime juice, honey (if using), salt, and any cooked aromatics. Blend it up until smooth, adding a splash more vinegar or water if it's looking too thick.
04 - Pour your blended mixture into a saucepan and let it simmer over medium heat for 15-20 minutes. Give it a stir now and then - you want it to thicken slightly and let all those flavors get to know each other. Just keep an eye on it and don't let it boil.
05 - Give it a careful taste and adjust as needed. Want it sweeter? Add some honey. Spicier? Blend in another habanero or some seeds. Too hot? Balance it out with more pineapple or vinegar.
06 - Let the sauce cool down a bit, then pour it into clean glass bottles or jars. This will keep in the fridge for up to 3 months, and the flavor actually gets better over time!
