Peppermint Cookies (Print Version)

# Ingredients:

01 - Unsalted butter, room temp (1 cup).
02 - Sugar (1 1/4 cups).
03 - Large egg (1).
04 - Egg yolk (1).
05 - Vanilla extract (2 teaspoons).
06 - Peppermint extract (1 1/2 teaspoons).
07 - All-purpose flour (3 2/3 cups).
08 - Cornstarch (2 tablespoons).
09 - Baking powder (1 1/2 teaspoons).
10 - Kosher salt (1 teaspoon).
11 - Unsalted butter for frosting (1 cup).
12 - Powdered sugar (3 cups).
13 - Peppermint extract for frosting (1 teaspoon).
14 - Cold cream cheese (4 oz).
15 - Red gel food coloring.
16 - Crushed candy canes for topping.

# Instructions:

01 - Heat oven to 350°F. Mix dry ingredients in bowl.
02 - Cream butter and sugar, add eggs and extracts, then mix in dry ingredients.
03 - Roll dough 1/2 inch thick, cut with 3-inch round cutter.
04 - Cook 8-10 minutes until puffy but not brown.
05 - Beat butter, add sugar gradually, mix in extract, salt and cream cheese.
06 - Divide frosting, color 2/3 red and leave rest white.
07 - Pipe red lines in star pattern, fill with white frosting, top with candy pieces.

01 - Use kitchen scale for best results.
02 - Don't overbake - remove before browning.
03 - Keep cream cheese cold for frosting.
