Parmesan Garlic Roasted Potatoes (Print Version)

# Ingredients:

01 - 2 pounds red potatoes, cut into 1 inch pieces.
02 - 2 tablespoons olive oil.
03 - 1/2 cup grated parmesan cheese.
04 - 3 garlic cloves, minced.
05 - 1/2 teaspoon oregano.
06 - 1/4 teaspoon salt.
07 - 1/4 teaspoon pepper.
08 - Chopped parsley for garnish.

# Instructions:

01 - Preheat oven to 400°F. Spray baking sheet with non-stick cooking spray.
02 - Mix olive oil, parmesan, garlic, and oregano in large bowl. Toss with potatoes to coat.
03 - Lay potatoes in single layer on baking sheet. Season with salt and pepper. Optional extra parmesan on top.
04 - Bake 30-35 minutes until golden brown and crisp. Garnish with parsley before serving.
