oven fried potatoes and onions (Print Version)

Crispy oven-fried potatoes paired with caramelized onions and savory seasonings.

# Ingredients:

01 - 1 1/2 lbs red potatoes
02 - 1 1/2 tsp kosher fine salt
03 - 1 Tbsp extra virgin olive oil
04 - 4 cloves garlic, minced
05 - 1 white onion, thinly sliced
06 - 2 tsp chopped chives
07 - 1 tsp flaky sea salt
08 - 1/2 tsp freshly cracked black pepper

# Instructions:

01 - Preheat oven to 400˚F.
02 - Cut the potatoes into quarters. Add to a pot and fill with enough water to cover the potatoes. Add kosher salt to the water and stir. Bring to a boil over high heat.
03 - Once the water starts to boil, remove from heat, drain the potatoes, and set aside.
04 - While the potatoes are coming to a boil, add olive oil and garlic to a rimmed baking sheet or dish. Place the pan in the oven to heat for about 5 to 7 minutes.
05 - Remove the pan from the oven carefully. Add potatoes to the pan in an even layer, cut side down, avoiding any overlap. Roast for 30 to 35 minutes until the bottoms are golden brown and crispy.
06 - Remove the pan from the oven and flip the potatoes so the other cut side is down. Sprinkle the sliced onions on top.
07 - Roast for another 20 to 30 minutes, until the potatoes are crispy on the bottom. Stir occasionally to ensure the onions do not burn.
08 - Remove the pan from the oven and top with flaky sea salt, black pepper, and chives.
