Peel the beets. Cut them into thick slices and further into ½-inch strips.

In a large mixing bowl, toss the beet strips with olive oil, salt, and pepper to coat evenly.

Remove the preheated baking tray from the oven and arrange the beet strips in a single layer without overlap. Bake for 15 minutes. Toss the beets and bake for another 10 minutes, or until crispy. Sprinkle with additional salt upon removal.

In a small bowl, whisk together the reduced-fat mayonnaise and sambal oelek until well combined. Serve alongside the beet fries.
