Oven Baked Beet Fries with Spicy Aioli (Print Version)

# Ingredients:

01 - 4 medium red or golden beets
02 - 1 tablespoon extra virgin olive oil
03 - 1 teaspoon salt
04 - 1/2 teaspoon ground pepper

→ For the Aioli

05 - 1/2 cup reduced-fat mayonnaise
06 - 1 tablespoon sambal oelek

# Instructions:

01 - Preheat oven to 425 degrees Fahrenheit. Place a large baking tray in the oven while it heats.
02 - Peel the beets. Cut them into thick slices and further into ½-inch strips.
03 - In a large mixing bowl, toss the beet strips with olive oil, salt, and pepper to coat evenly.
04 - Remove the preheated baking tray from the oven and arrange the beet strips in a single layer without overlap. Bake for 15 minutes. Toss the beets and bake for another 10 minutes, or until crispy. Sprinkle with additional salt upon removal.
05 - In a small bowl, whisk together the reduced-fat mayonnaise and sambal oelek until well combined. Serve alongside the beet fries.

# Notes:

01 - Ensure the beet strips are cut evenly for consistent cooking.
02 - Do not overcrowd the baking tray; use multiple trays if necessary.
03 - Preheating the baking tray enhances crispiness.
04 - Toss the beet fries halfway through baking for even browning.
05 - Beet fries will not be as crispy as traditional fries. Opt for deep frying for extra crispiness, if desired.
06 - Freeze the fries and reheat in the oven at 350 degrees Fahrenheit for 15 minutes or until cooked through.
