Easy Oatmeal Cookie Bars Recipe (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 1 cup butter, room temperature
02 - 1 cup light brown sugar
03 - 1/2 cup granulated sugar
04 - 2 large eggs
05 - 1 tablespoon vanilla extract

→ Dry Ingredients

06 - 1 1/2 cups all purpose flour
07 - 2 cups old-fashioned (rolled) oats
08 - 1 teaspoon kosher salt
09 - 1 teaspoon ground cinnamon
10 - 1 teaspoon baking soda
11 - 1 teaspoon baking powder

→ Mix-ins

12 - 1/2 cup semi-sweet chocolate chips
13 - 3/4 cups raisins
14 - 1/2 cup walnuts

# Instructions:

01 - Preheat oven to 350°F. Line a 9×13-inch baking dish with parchment paper and coat with nonstick spray. Set aside.
02 - In a stand mixer bowl with paddle attachment, mix butter, brown sugar, and granulated sugar on medium speed for 2 minutes. Add eggs, vanilla, salt, cinnamon, baking soda, and baking powder, mixing until smooth. Scrape sides of bowl as needed.
03 - Turn mixer to low and add flour and oats, mixing until combined.
04 - Stir in chocolate chips, raisins, and walnuts until evenly incorporated.
05 - Press mixture into prepared pan and bake for 20-25 minutes until edges are golden-brown and firm.
06 - Allow bars to cool completely before cutting to prevent crumbling.

# Notes:

01 - Quick oats can be substituted for old-fashioned oats with slightly different texture
02 - Center may look slightly underdone but will continue cooking while cooling
03 - Stores in refrigerator for 4-5 days in airtight container
04 - Can be frozen between parchment paper layers for 2-3 months
