Line an 8 x 8 inch (20cm square) tin with baking parchment.

Remove the pits from the dates if not already pitted. If your dates are dry, soak them in warm water for around 10 minutes until they are soft.

Add the pitted dates, nuts and shredded coconut to a food processor and blend until you have a sticky, uniform mixture with only small pieces of nuts remaining.

Press the date mixture into the lined tin so that it is flat and evenly covers the base.

Melt the chocolate in a double boiler (a heatproof bowl set over a simmering pan of water) or microwave the chocolate in 30 second intervals, stirring each time, until the chocolate is molten and smooth.

Pour the melted chocolate over the top of the date mixture and use a spatula to spread it in an even layer.

Chill the bars in the fridge for about 30 minutes or freezer for 10 minutes, until the chocolate is firm.

Remove the bars from the tin and place them on a cutting board. Use a sharp knife to cut the bars into your preferred size.

For extra decoration, you can also fill a piping bag with melted chocolate to decorate the top with a yummy drizzle! Add optional sprinklings of sea salt, hemp seeds, or cacao nibs if desired.
