No Bake Chocolate Date Bars (Print Version)

# Ingredients:

→ Base Ingredients

01 - 12 large (210 g) Medjool dates, pitted
02 - 1 ½ cups (195 g) mixed nuts (unsalted, raw almonds, walnuts, cashews)
03 - ¾ cup (60 g) unsweetened shredded coconut

→ Topping

04 - 1 ½ cups (240 g or 8.5 oz) vegan chocolate chips or finely chopped chocolate

→ Optional Decoration

05 - Additional melted chocolate for drizzling
06 - Sea salt, hemp seeds, or cacao nibs for sprinkling

# Instructions:

01 - Line an 8 x 8 inch (20cm square) tin with baking parchment.
02 - Remove the pits from the dates if not already pitted. If your dates are dry, soak them in warm water for around 10 minutes until they are soft.
03 - Add the pitted dates, nuts and shredded coconut to a food processor and blend until you have a sticky, uniform mixture with only small pieces of nuts remaining.
04 - Press the date mixture into the lined tin so that it is flat and evenly covers the base.
05 - Melt the chocolate in a double boiler (a heatproof bowl set over a simmering pan of water) or microwave the chocolate in 30 second intervals, stirring each time, until the chocolate is molten and smooth.
06 - Pour the melted chocolate over the top of the date mixture and use a spatula to spread it in an even layer.
07 - Chill the bars in the fridge for about 30 minutes or freezer for 10 minutes, until the chocolate is firm.
08 - Remove the bars from the tin and place them on a cutting board. Use a sharp knife to cut the bars into your preferred size.
09 - For extra decoration, you can also fill a piping bag with melted chocolate to decorate the top with a yummy drizzle! Add optional sprinklings of sea salt, hemp seeds, or cacao nibs if desired.

01 - These No Bake Chocolate Date Bars are vegan, gluten-free and need just 4 main ingredients. They make a great snack or wholesome dessert!
02 - For a nut-free version, use pumpkin seeds and sunflower seeds in place of the nuts.
03 - For a refined sugar-free version, use a refined sugar free chocolate available from brands such as Pascha, Lakanto or Hu.
04 - Store these bars in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
