Mexican Picadillo Recipe (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 tablespoon olive oil
02 - 8 ounces yellow potatoes (about 3-4 small), diced
03 - 1 medium yellow onion, chopped
04 - 1 jalapeno pepper, chopped
05 - 1 serrano pepper, chopped (optional, for spicier)
06 - 2 cloves garlic, chopped
07 - 1 pound ground beef (or ground chicken, turkey, or pork)
08 - 2 large tomatoes, chopped
09 - 3/4 cup beef stock (or chicken or vegetable stock)

→ Seasonings

10 - 1 tablespoon paprika
11 - 1 tablespoon Mexican oregano
12 - 1 teaspoon cumin
13 - Salt and pepper to taste

→ For Serving

14 - Cooked rice or warmed tortillas
15 - Sliced peppers
16 - Chili flakes
17 - Fresh lime juice
18 - Hot sauce

# Instructions:

01 - Heat the olive oil in a large pan over medium heat. Add the diced potatoes, chopped onion, jalapeno pepper, and serrano pepper (if using). Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
02 - Stir in the chopped garlic and ground beef. Use a wooden spoon to break up the meat as it cooks. Brown the meat for about 5 minutes - it doesn't need to be cooked all the way through at this stage.
03 - Add the chopped tomatoes, beef stock, paprika, Mexican oregano, cumin, salt, and pepper to the pan. Stir well to combine all ingredients evenly.
04 - Reduce the heat to low and let the mixture simmer uncovered for 20 minutes. This allows the flavors to meld together, the liquid to reduce slightly, and the potatoes to fully soften.
05 - Serve the picadillo hot over cooked rice or with warm tortillas. Garnish with additional sliced peppers, chili flakes, a squeeze of fresh lime juice, and your favorite hot sauce for added flavor and heat.

# Notes:

01 - This versatile Mexican dish features ground beef and potatoes in a savory, well-seasoned sauce that works as both a filling for tacos and a topping for rice.
02 - Traditional Mexican picadillo variations often include ingredients like parsley, blanched almonds, olives, carrots, and raisins - feel free to customize this recipe to your taste.
