Melting Moments (Print Version)

# Ingredients:

01 - 250g unsalted butter, softened.
02 - 1 teaspoon vanilla extract.
03 - 1/2 cup powdered sugar.
04 - 1 1/2 cups all-purpose flour.
05 - 1/2 cup cornstarch.
06 - 100g butter for lemon filling.
07 - 2 cups powdered sugar for filling.
08 - 2 teaspoons lemon zest.
09 - 1 teaspoon lemon juice.

# Instructions:

01 - Heat oven to 350°F. Line trays with paper.
02 - Beat butter, vanilla and sugar until fluffy. Stir in flour and cornstarch in three batches.
03 - Roll tablespoons of dough into balls. Press with fork to 1cm thick.
04 - Bake 15 minutes, switching trays halfway. Cool completely.
05 - Beat butter until fluffy. Add sugar in batches, then lemon zest and juice.
06 - Pipe filling on half the cookies, sandwich with remaining cookies. Chill 1 hour.

# Notes:

01 - Use soft icing sugar, not pure icing sugar.
02 - Can also use passionfruit filling.
03 - Best stored in fridge but serve at room temp.
