Mediterranean Spinach and Feta Crisps (Print Version)

# Ingredients:

→ Filling

01 - 2 cups fresh spinach, chopped (or 1 cup frozen, thawed and drained)
02 - 1 cup crumbled feta cheese
03 - 1/4 cup ricotta cheese
04 - 1 clove garlic, minced
05 - 1/2 tsp dried dill
06 - 1/8 tsp ground nutmeg
07 - Salt and pepper, to taste

→ Crisps

08 - 1 package phyllo dough, thawed
09 - 1/2 cup unsalted butter, melted (or olive oil, for brushing)
10 - Sesame seeds (optional, for garnish)

# Instructions:

01 - In a mixing bowl, combine the spinach, feta, ricotta, garlic, dill, nutmeg, salt, and pepper. Mix until well combined. If using frozen spinach, thoroughly squeeze out excess moisture before combining.
02 - Preheat your oven to 190°C (375°F). Lay one sheet of phyllo dough on a clean surface and brush it lightly with melted butter or olive oil. Layer a second sheet on top and repeat the process until you have 3 layers.
03 - Cut the layered phyllo into strips approximately 3 inches wide. Place a teaspoon of filling near the bottom of each strip. Fold one corner of the strip over the filling to form a triangle, then continue folding in a triangular shape until the strip is completely wrapped. Repeat with the remaining phyllo and filling.
04 - Place the folded crisps on a baking sheet lined with parchment paper. Brush the tops with butter or olive oil and sprinkle sesame seeds on top if desired. Bake for 15-20 minutes, or until golden and crisp.
05 - Allow the crisps to cool slightly before serving. For a complete Mediterranean experience, pair with tzatziki sauce or a fresh Greek salad.
