# Ingredients:

→ Main Ingredients

01 - 4 large eggs
02 - 200g block of fresh feta cheese
03 - 1 cup cherry tomatoes, halved
04 - 1/4 cup kalamata olives, pitted and chopped
05 - 2 tablespoons fresh oregano leaves
06 - 2 tablespoons extra virgin olive oil
07 - 1 small red onion, thinly sliced
08 - 2 cloves garlic, minced
09 - Pinch of red pepper flakes
10 - Sea salt and freshly ground black pepper
11 - Fresh parsley for garnish (optional)

# Instructions:

01 - Preheat oven to 400°F (200°C). Grab a ceramic baking dish and drizzle olive oil across the bottom, creating a golden base of flavor.
02 - Scatter the thinly sliced onions and minced garlic across the dish. Crumble the feta cheese generously across the dish. Nestle the halved cherry tomatoes and chopped olives around the cheese, creating a colorful Mediterranean mosaic.
03 - Carefully crack each egg directly onto the feta. Try to keep the yolks intact. Sprinkle fresh oregano, a pinch of red pepper flakes, and season with sea salt and black pepper. Add a final drizzle of olive oil.
04 - Place the dish into the oven for 12-15 minutes. You're looking for set whites and runny yolks.

# Notes:

01 - For variation, try adding baby spinach, swapping feta for goat cheese, adding chorizo, sprinkling za'atar, or including roasted red peppers
02 - This dish is perfect for weekend brunch and can be easily scaled up for guests
